Deconstructed caramel apple

Oh my! I am so excited to share this recipe with all of you. This delicious light and healthy dessert inspired by a caramel apple. If you have a sweet tooth and are striving to eat a clean diet this is a wonderful way to indulge without eating processed sugars. When eating a clean diet, it can be a real challenge to find desserts to enjoy.  One evening I was thinking how nice it would be to have something a little sweet, quick and easy to make to enjoy. A deconstructed “caramel apple” popped into my mind. I had just purchased some honey dates from the farmers market and are they ever delicious little pieces of heaven.

This dessert is not only raw and clean but it takes all of 5 minutes to make. All you have to do is chop up some apple and dates and drizzle with nut butter and honey. Sprinkle all the goodies over the top and its ready to indulge in!


Dates are a good source of vitamin B6 and vitamin A. Dates contain niacin, an important vitamin that your body uses to help break down food into energy and to assist with nerve function. They are also a good source of fiber, iron, phosphorus, potassium, magnesium and zinc.

Dates are described as natures candy with their soft texture and creamy caramel flavor. Now not all dates are created the same but you can see the ones that are soft looking, so far medjool are my favorite but there are so many delicious varieties.

I must admit I was so happy to have found a delicious dessert to enjoy on warm summer evenings. Its nice to have a crunchy texture and pops of tart from the apple and sweet from the dates and honey. I absolutely love to use Cacoco. I found it at a market but you can also purchase it online

I love using as a topping on my smoothies and this dessert. However if you want to make it easy just grab your favorite dark chocolate bar, chop it up and sprinkle on top! Have fun experimenting with whatever additions you desire like chopped up almonds and a little himamlayan sea salt to make the perfect salty sweet combination of flavors.

I love Cacoco, it’s usually used to make hot chocolate type drinks and is absolutely delicious.

However I also like to use a dark chocolate bar especially with salted almonds in it and chop it up. Get creative!


1 cup diced organic apple

4 chopped dates

1 tbsp organic nut butter

1/2 tbsp local honey

1 tsp shredded organic unsweetened coconut

1 tbsp cacoco or a dark chocolate bar

Dash of cinnamon


Chop up apples & dates and place in bowl

Drizzle nut butter & honey over the apples and dates

Sprinkle coconut and Cacoco or chop up your favorite dark chocolate bar.

Make sure to chop up the dark chocolate and sprinkle it over.
